I found this great recipe to share with you that I hope to try sometime this holiday season.
Fresh Cranberry Salad
2 (12oz) Pkgs Fresh Cranberries
1 Cup Sugar
1 (20oz) Can Crushed Pineapple, Drained
1 Cup Chopped Pecans
1 Pint Heavy Whipping Cream
7 oz Miniature Marshmallows
Coarsely chop the cranberries in a food processor. Mix the cranberries with sugar in a non-metal bowl and refrigerate for 12 hours.
Whip the cream until stiff. Add the pineapple and nuts to the cranberries and mix well. Fold into the whipped cream and marshmallows. Keep refrigerated until ready to serve.
